Fries and Gravy... vegan style!

I tried a vegan gravy tonight from premedchef.blogspot.com - it was DELICIOUS!!!!

You can check out the link above for the detailed and original recipe, but as usual, I don't measure much when I cook, so here is how I threw it together:

I bought some pre-cut fries and put those in the oven while I was making my gravy.

Here's what i did:

In a pot:
- heat oil (about a tbsp)
- add chopped garlic (2 cloves)
- add chopped onion (1 small)
- some brown lentils (~1.5 cups).  I bought precooked lentils instead of making them tonight.

once the onion is cooked a bit (~4-5 mins), add:
- some water (~1cup)
- 2 cap fulls of soy sauce
- a few shakes of chili flakes
- some oregano (~1 tsp)

bring to a boil, then simmer until sauce thickness is to your liking.  I simmered until my fries were ready (~15 minutes)
- you can add a bit of liquid as you're simmering in case the sauce gets dry.  I used vegetable stock but water would be fine too.

Hope you love it lady!!!

and we're back...

Magic Cookie Bar

I recently found out about magic cookie bars (oh the things I've learned during my time away from home...) and decided to find a vegan version.  So I found one on veganbaking.net which looked like this:
Vegan Chocolate Coconut Madness Bars
BUT of course mine didn't come out gooey like that.  So I will have to try these again.

Here's what you will need (with a few of my alterations):
- small pack of graham crackers (hand crushed in the bag, didn't have food processor)
~5 tbsp of coconut oil (melted what was left in the jar by placing near oven during preheat)
~1 Tbsp of water
1/8 teaspoon salt   I forgot this part, oops.
- nuts (excluded by choice)
- chocolate chips (half a small bag or as much as you want)
- shredded coconut (I add more than 1/2 cup just for fun)
- caramel

Vegan Caramel
I couldn't find the vegan caramel so I made my own.  Here's what I did:
- a few scoops of earth balance (soy free) vegan butter
- few scoops of brown sugar (sweeten to taste)

Heat butter and sugar on low-medium heat stirring constantly.  Mixture will start off separated, but after a bit of bubbling it will come together like caramel.  Don't cook for more than 2-3 minutes.  When golden brown, it's ready.  Don't let it get too dark, it might look fine but will taste burnt.

Put it all together
1. crush graham crackers as much as you can/want in the package by hand
2. dump into a bowl and add the melted coconut oil, and a splash of water
3. mix and put it on a parchment lined pan
4. pat the crumbs to make a good solid base

5. sprinkle some coconut, then chocolate chips, then coconut then chocolate chips.  layer as many times as you want
6. pour caramel on top
(i think my caramel was a bit too dark)

bake in oven at 325 degrees F for 30 minutes.

When done, let cool a bit.  Cut and enjoy. (sorry forgot to take a picture of the final product)
It was all eaten within 24 hours.

Mine weren't very chewy, I guess i could have baked it for a shorter time or added caramel as a layer in the middle?

Hey lady, try this and see how they turn out.
